About Pardas Rupestris

Pardas Rupestris derives its name from the rock upon which the vines of Celler Pardas flourish. At the Finca Can Comas, the vineyards of white grape varieties are rooted in ancient, shallow soils, where the roots penetrate down to the bedrock in search of the water and minerals they require. A demanding terrain that leaves its mark on the wine.
 
The foundation of Pardas Rupestris comes from several vineyards of xarel·lo and Malvasía de Sitges. Among these are Muç, planted in 1971, Rebato, Escaletes, Sant Pere, and Sant Quintí, while the malvasía is sourced from Les Planes and Mir. The xarel·lo thrives on clay-limestone soils and the malvasía on silty loam terrains, two distinct expressions of Can Comas that ultimately converge in the bottle. The cultivation adheres to Pardas's "no-cultivation" philosophy. No herbicides, insecticides, or synthetic products are employed, nor is the soil tilled. Spontaneous cover crops protect the land and help maintain its balance, while the vines face challenging conditions during the summer that compel their roots to delve deeper.
 
The harvest of Pardas Rupestris is conducted manually, using 20 kg crates. At the winery, the grapes are destemmed and crushed before being gravity-fed into the press. Fifty-five percent of the must obtained is free-run juice, and fermentation takes place with indigenous yeasts over 20 days at 17°C in cement tanks. The wine does not undergo malolactic fermentation and is not clarified. Subsequently, Pardas Rupestris remains in tanks for several months, with battonage every 10-15 days, and continues refining for additional months in century-old cement tanks. A process that seeks to impart texture and depth while remaining true to the natural expression of the fruit and the soil.

Pardas Rupestris 2022 is a profiled white wine with aromas of ripe white fruit accompanied by slight citrus notes. In the mouth, it is fruity, fresh, and balanced. A wine with marked acidity, a cheerful step, and a spicy finish with touches of bitterness.

2012 Diverse and fresh on the palate. Broad, honest and silky upon entry. Lots of character.  A consistent sharp acidity deeply pushes forward fruity notes of pears, apricots and peaches, creating a lot of tension in the mouth and moving towards a strict, electric, fresh and slightly bitter finish.

Intense in the nose with depth. Citrus fruits at the forefront. Then pear and ripe melon.
