Pardas Blau Cru 2023 is a white wine that combines finesse and character. About Pardas Blau Cru

For centuries, Malvasía de Sitges existed within the DO Penedès overshadowed by more widespread varieties. A discreet presence for a grape with a much larger history: of uncertain origin, possibly linked to Crete or the coast of the Peloponnese, it arrived in the Mediterranean with the Greeks and settled on the Catalonian coast.
 
At Celler Pardas, they decided to give it a new opportunity. Their association with this variety began in 2007, when they travelled to Garraf to obtain plant material and brought it to their estate, Can Comas, in the inland Penedès. There, they planted it, learned to understand it, and after several years, Pardas Blau Cru was born, the result of a commitment to revive a historic variety.
 
Finca Can Comas is located in Torrelavit, at an altitude of 200 to 300 metres, in a warm and semi-arid Mediterranean landscape where different soil types coexist. The vineyard is cultivated using sustainable and low-intervention agriculture: without herbicides or insecticides, no synthetic products, and avoiding ploughing the land to protect it from erosion. The harvest is also conducted manually. 
 
In the winery, Pardas Blau Cru is destemmed and undergoes a maceration of 6 to 7 hours before fermenting at 16 ºC for approximately 20 days. During this process, periodic bâtonnages are performed to enhance the wine's texture and volume.
 
Pardas Blau Cru is the vindication of a historic variety that, after centuries of waiting for its moment, has found a new place to express itself in the inland Penedès.
