Pardas Aspriu 2015 is akin to unlocking a chest that encapsulates the essence of Penedès. This wine reveals a complex and sophisticated character, thanks to its blend of cabernet Franc and cabernet Sauvignon. About Pardas Aspriu Criança

Pardas Aspriu originates from a single plot: La Barraca. It encompasses 2.69 hectares located on the slopes of the Bitlles River, planted in 1996 and facing north, where a deep, stony terrain of clay and gravel provides the conditions for cabernet franc to find its own expression.
 
For Celler Pardas, crafting Pardas Aspriu involves more than selecting a fine vineyard. The aim is for the place to be recognisable in the glass, without embellishment or imposing a formula. Therefore, they manage La Barraca with ecological and low-intervention viticulture, which they themselves call "non-cultivation": no herbicides, insecticides, or synthetic products are used, and the soil is not ploughed, remaining protected by spontaneous ground cover.
 
The harvest of Pardas Aspriu is carried out manually with a rigorous selection on the plot itself. In the winery, the grapes are destemmed without crushing and enter by gravity into old cement tanks, where they ferment with indigenous yeasts. The process begins at 24°C and drops to 20°C during the final days. Subsequently, the wine rests for five months in the tank before spending several more months in used French oak barrels of 225 and 300 litres. Pardas Aspriu is neither stabilised nor clarified. This decision aligns with a working method that seeks to preserve the parcel's personality intact and allow the cabernet franc to express its full uniqueness.
 
Pardas Aspriu does not attempt to narrate a story about La Barraca. It seeks to let La Barraca and the Penedès speak for themselves.

2007 Intense, warm and wide attack. Fleshy, sweet and tasty mid palate, with ripe fruit and well balanced notes of wood. Ripe tannins. Long finish that leaves an aftertaste of fruit and spices.

Intense cherry red colour with fine violet reflections. Medium robe. Abundant and dense tears that stain the glass.

Intense and powerful notes of red fruit in all its forms: fresh, ripe and candied. A hint of black fruit and very well integrated strong toasted aromas provided by the wood. Touches of spicy, creamy (yogurt), chocolate, coffee, leather and hints of wet earth and minerals.
2005 It has a discreet entrance and sense of volume growing at times to fill in the mouth. Then, long and persistent. Many fruits and clean tannins and fleshy.

Cherry red color, high layer.

Very fresh and balsamic, licorice, rosemary. Very pronounced mineral component, one can smell the earth. Fruits of the Mediterranean: pomegranate, bitter orange curtain, that binds with a memory of Cointreau liqueur. You may also smell a hint of raspberry jam. Roasted plums are also many.
