About Viuda Silvestre

What if what some call a weed is precisely what makes a landscape special? In the Sierra de Salamanca, amidst ancient vines and slate terraces, the viuda silvestre grows freely among the vineyards, ultimately lending its name to a white wine as unique as its story. There is something beautiful in this notion: allowing nature to take its course and discovering that sometimes what seemed out of place is what best defines a region.
 
With this perspective, Malahierba Vinos was born in 2019, founded by Silvia Rocher and Manuel García, two agricultural engineers united by a philosophy of viticulture that favours respect over control. He has a profound knowledge of these mountains and works the vineyards alongside his family; she arrived with the experience of having harvested in California, New Zealand, and Italy. Together they revive old vines and indigenous varieties, allowing the natural vegetation to be part of the landscape and each plot to retain its own character.
 
Viuda Silvestre is 100% rufete blanco from Garcibuey, one of the rarest and most captivating varieties of the sierra. Manual harvesting and a gentle maceration with the skins lead to spontaneous fermentation and 18 months of ageing in used French oak barrels. The result is a white with depth and balance, where the mountain freshness meets a more serene and enveloping texture, allowing the slate, fruit, and oak influence to blend seamlessly without losing its natural essence.
 
Viuda Silvestre is one of those wines you crave when seeking something different without unnecessary complexity: a bottle to open slowly, serve at a table with engaging conversation, and let its story unfold gradually.
