About Tio Uco

Tío Uco is a village wine originating from El Pego, in the heart of the DO Toro, with a clear vision: to revive a more traditional winemaking process and a fresher expression of the region. Behind Tío Uco is Alvar de Dios, one of the young winemakers who has successfully highlighted the value of his family's old vineyards and advocated for a different understanding of this appellation.

To craft Tío Uco, Alvar de Dios blends grapes from three plots located in El Pego, Sanzoles, and Venialbo, among the highest-altitude vineyards of his project. One of these, at 35 years old, is still considered young compared to the other two, planted 89 and 93 years ago. Old vines, predominantly sandy soils, and organic and biodynamic viticulture are the starting points for this red wine.

In the winery, the intention is clear: to revive traditional winemaking techniques that were once customary in the region. The grapes are hand-harvested and ferment with stems for 15 days in stainless steel tanks, using indigenous yeasts. Afterwards, Tío Uco undergoes several months of maturation in wood, where it gains complexity and depth without losing the freshness that defines its style.

The result is a red wine of tinta de Toro and garnacha that presents a much lighter and more approachable side of the DO Toro. Fruity, flavourful, and easy to drink, it is a wine designed for uncomplicated enjoyment, whether as an aperitif or around the table.

Tío Uco serves as the gateway to the universe of Alvar de Dios, but also as a statement of intent: to demonstrate that the DO Toro can be much more than just power and concentration.
