Cantayano 2025 is a fresh and straightforward white wine, capturing the purest essence of the verdejo grape without embellishments. About Cantayano

Cantayano emerges from the combination of the surnames of Manuel Cantalapiedra Moyano, son of Isaac Cantalapiedra and the second generation leading this family venture. It is a declaration of intent that aptly encapsulates the winery's philosophy: to produce wine in La Seca, work with Verdejo, and allow the grape variety and landscape to speak without excessive embellishment.
 
The project was established in 2014 when Isaac and Manuel began crafting their own wines after several generations dedicated to viticulture. Since then, they have committed to organic viticulture and to reviving an expression of Verdejo less influenced by trends. Cantayano is their flagship wine, and also one of the finest introductions to this way of understanding the variety.
 
In addition to their own plots, the family sources grapes from La Seca, Nieva, and Castronuño, always adhering to the same selection criteria. The vineyards, situated at approximately 750 metres above sea level, thrive on sandy-loam soils with clay-limestone subsoils and a distinctive layer of pebbles.
 
In the winery, the grapes are destemmed and directly pressed before undergoing spontaneous fermentation with native yeasts in stainless steel tanks. The fermentation proceeds slowly, over about 20-25 days at 20°C, and the wine subsequently completes malolactic fermentation. From there, it undergoes several months of ageing on its lees, without stirring, with 10% of the wine maturing in French oak barrels and the remainder staying in stainless steel.
 
Cantayano is an unadorned Verdejo: organic, varietal, and born from a family that has spent decades striving to demonstrate that this grape still has many stories to tell.

2024 Cantayano 2024 unveils a refreshing straw yellow hue, clear and radiant to the eye. As it approaches the nose, inviting aromas of ripe peaches and delicate pineapple notes emerge, all adorned with subtle spicy nuances and a mineral undertone reminiscent of the earth from which it hails. On the palate, it presents itself as flavourful and full-bodied, displaying an enveloping volume and a silky texture. Its balanced acidity awakens the senses, culminating in a lingering finish that leaves a mark. This wine is ideal for those seeking a vibrant and well-harmonised experience, standing out for its fresh and sophisticated expression.
2018 Cantayano 2018 is an aromatic white wine with ripe white fruit fragrances, notes of sponge cake and mineral touches. On the palate it is balanced, broad and lingering. Flavours of roasted apples, pastries and a delicious mineral finish.
