From the D.O. Montilla-Moriles, nestled in the province of Córdoba (in the northwest of Spain), comes this concentrated and warm palo cortado. The origin of this wine, one of the most exceptional in the realm of fortified wines, stems from an aged fino that, after its biological ageing, had already commenced its oxidative phase. Here, in this unforeseen transformation, lies the enchantment of these mystical and renowned wines, which are nothing more than the outcome of a sudden metamorphosis. After pressing, and before fermentation, the most seasoned cellar masters can discern at a glance which batch will be best suited for each type of vinification. While some will be perfect for biological ageing (producing luxurious finos and amontillados), others will be ideal for the oxidative ageing of olorosos. However, the case of palo cortado is very different as it begins as a biologically aged wine but, for unknown reasons, it independently decides to switch to oxidative ageing. A mystery yet to be solved. 
 
Unlike other regions, such as the D.O. Jerez-Xérès-Sherry, where this type of wine is crafted with palomino, Toro Albalá Poley Palo Cortado en Rama Solera 25 Años is based on the Pedro Ximénez grape, the reigning variety of the area. Specifically, this white grape occupies 95% of the vineyard surface in the D.O. Montilla-Moriles. Generally, this variety is used for sweet wines (following sun-drying); however, in the production of Toro Albalá Poley Palo Cortado en Rama Solera 25 Años, this final operation is omitted.
 
Finally, after an average of 25 years in the criaderas and soleras system, Toro Albalá Poley Palo Cortado en Rama Solera 25 Años is bottled and labelled manually, including the author's signature. A true luxury that no one should miss.
