Who ever declared that wine must adhere to a stringent manual to be unforgettable? In the volcanic landscapes of Auvergne, France, Patrick Bouju and Justine Loiseau revel in defying the Old World's logical norms, and their iconic Môl is the liquid testament to such rebellion. It is not your typical red; it is a freeform collage, a daring blend of red and white grapes sourced both from their plots and from friendly vineyards in the south of France.
 
The essence of Patrick Bouju Môl lies in its untamed diversity, uniting in a single mosaic varieties like cinsault, grenache, carignan, merlot, gamay and a fragrant hint of sauvignon blanc and muscat of Alexandria. The grapes thrive by merging the strength of the volcanic soils of central France with the Mediterranean warmth of Languedoc and the vibrant character of the Loire. The entire vineyard is cultivated following the principles of radical organic and biodynamic agriculture, where biodiversity reigns and the soil remains untouched by chemicals. The harvest is conducted manually, aiming for the freshest and liveliest point of each cluster.
 
In the winery, the fruit is expressed without chains or filters. The grapes ferment separately at their own pace with wild yeasts while gently absorbing the light, colour, and joy of the skins. True to his philosophy, Patrick eschews any trace of sulphur or manipulation. The wine rests briefly before proceeding directly to the bottle unclarified and unfiltered, preserving intact that crisp and wild touch of freshly pressed fruit.
