About Manzanilla Pasada Pastora

Sanlúcar de Barrameda, located at the mouth of the Guadalquivir, is the birthplace of this manzanilla pasada, the second to be marketed by Barbadillo, one of the most iconic wineries of the DO Manzanilla - Sanlúcar de Barrameda. What exactly is a manzanilla pasada? These are wines, with biological ageing, that have spent many years under the veil of flor (the famous yeast layer that forms on the surface of the wine in southern Spain). This layer, occasionally very thin, is a living microorganism that, like any other being, is born, lives, and dies. This means that over time, this veil weakens, sometimes creating small 'bald patches' where a portion of the wine comes into contact with air and begins to oxidise. Although this does not happen with Manzanilla Pasada en Rama Pastora (care is taken to keep the veil intact), it is true that throughout this period, the yeast has had ample time (between 8 and 9 years in the case of Barbadillo) to break down all the wine's components: sugars are consumed, glycerine is processed, and new aromas develop (among many other processes).
Like any manzanilla, Manzanilla Pasada en Rama Pastora originates from the palomino grape, native to the region, which is the soul of these wines. After the harvest, the grape clusters arrive at the winery, where they are processed and pressed. Due to climate change and the high temperatures characteristic of southern Spain, these operations are carried out at the end of summer, between August and September. A couple of months later, the first fermentation will have taken place, thus achieving the base wine (known in the region as mosto del año). This wine is then integrated into the criaderas and soleras system that Barbadillo owns in the renowned Arboledilla, one of the most emblematic cathedral-like wineries in the area. From all these casks, a portion is allocated to the manzanilla Solear Saca Estacional. Another portion, corresponding to Manzanilla Pasada en Rama Pastora, goes directly to the Pastoras, a winery with a clear orientation towards the river, right in the area where the upper and lower districts of Sanlúcar converge. In the world of manzanillas, location is crucial. Depending on the environmental conditions, the wine will take on one profile or another. And Montserrat Molina, the winemaker at Barbadillo, was certain that there was no better spot in the entire winery than this.
Finally, what makes Manzanilla Pasada en Rama Pastora special is its bottling process, where a complete selection of the solera is conducted (that part of the casks in contact with the floor). At the crucial moment, all the casks are inspected. Those that do not meet the standard are set aside (obviously), but unlike other manzanillas—where only the selected casks are bottled—Manzanilla Pasada en Rama Pastora remains united as a whole.
For years, it was missed. Many inquired about it until it was revived in the year 2000. Since then, Manzanilla Pasada en Rama Pastora has affirmed its status as indispensable for lovers of biological ageing. A truly unforgettable wine that neither your palate nor your soul will ever forget.
