There are times when many great wines begin with a simple question. At José Pariente, that question was straightforward: how far could sauvignon blanc go in the DO Rueda? The answer emerged after years of vineyard work, numerous trials, and small-scale vinifications that ultimately shaped Apasionado de José Pariente, a sweet wine as unexpected as it is elegant.
 
Produced exclusively from sauvignon blanc, it originates from some of the earliest vineyards of this variety planted in the DO Rueda over three decades ago. The vines grow on soils poor in organic matter, with abundant pebbles and limestone outcrops in the higher areas. A viticulture focused on low yields allows for grapes of great aromatic concentration, essential for achieving the balance between freshness and sweetness that defines this wine.
 
In the winery, every step is designed to preserve the aromatic intensity of the variety. The grapes for Apasionado de José Pariente undergo maceration at a very low temperature before a gentle pressing that extracts only the most delicate components. After fermentation, Apasionado de José Pariente is clarified, cold-stabilised, and carefully filtered, resulting in a sweet white wine of extraordinary purity, where the characteristic liveliness of sauvignon blanc remains intact.
